发明名称 FOOD EFFECTIVE TO LOWER CHOLESTEROL LEVEL
摘要 PURPOSE:To provide a food composed of vinegared beans and a hardly digestible polysaccharide, and having strong cholesterol-suppressing activity. CONSTITUTION:Beans (e.g. soybeans) are washed with water, steamed or heated, cooled, immersed in a vinegar (e.g. rice vinegar, fruit vigenar, etc.) for 1-7 days, taken out of the vinegar, and dried to obtain vinegared beans. Separately, cellulose, alginic acid, polysaccharide produced by acetobacter, etc., or their mixture is prepared as a hardly digestible polysaccharide. The vinegard beans are mixed with the hardly digestible polysaccharide at a ratio of about 1:(0.1-2) (dry basis with a water-content of about 5%) by an arbitrary mixing method.
