PURPOSE:To obtain a high-quality S-methylmethionine sulfonium, by treating the S-methylmethionine sulfonium existing in a citrus fruit with an ion exchange resin, and washing with an alkaline solution to effect the elution and recovery of the compound. CONSTITUTION:The juice produced by squeezing a citrus fruit such as tangerine, mandarin, shaddock, etc. is optionally sterilized, and treated with an ion exchange resin (e.g. a gel-type strongly acidic cation exchange resin) to effect the adsorption of S-methylmethionine sulfonium (a component of the fruit juice) to the resin. The resin is washed with an alkaline aqueous solution such as solution of sodium hydroxide, etc. to separate and recover the objective compound. S-methylmethionine sulfonium is a sulfur-containing amino acid essential to the growth of animal and known as vitamin U having antitumor activity.
