PURPOSE:To easily clean fats and oils adhered to a first buffering plate and to prevent leak of malodor through an intake air port, by a method wherein an opening and closing member, serving to bend the flow of oily smoke during operation of a blower, is rotated so that the one surface thereof is pointed to the interior side of a smoke exhaust device body during the stop of the blower, and a cleaning solution is guided to its inclined surface during cleaning. CONSTITUTION:During operation of a blower 5, in a position 20a, an opening and closing member 20 is inclined toward an intake air port 6, and fats and oils in oily smoke are adhered to an inclined surface 26 of the opening side of the opening and closing member 20, serving to bent the flow 25 of oily smoke flowing through an intake air port 6. When the blower 5 is stopped, the opening and closing member 20 is rotated to a position 20b, and an end part 21 is forced into contact with a seal part 24. But, the inclined surface 26, being present on the opening side during operation of the blower 5, is pointed to the interior side of a smoke exhaust body 1. Since the opening and closing member 20 is situated in a position 20b during cleaning, a cleaning solution 27, injected into an air drum 2 through a cleaning nozzle 7 and flowing down along an inner wall, flows down along an inclined surface 26' of the inner side, and washes out fats and oils adhered to said inclined surface.
