摘要 By inoculating milk with a yeast of the genus Torulopsis and Penicillium roqueforti, a cheese flavouring concentrate is obtained after a few days which is approximately 4 to 5 times more concentrated than traditionally matured Roquefort cheese. A preferred yeast is the species T. etchelsii. An addition of cream and/or lipase results in an increased yield.
