PURPOSE:To prepare a low-salt seasoning liquid having the taste and flavor of oyster, containing the extract component in high concentration, having excellent taste and flavor, and high preservability in spite of low salt concentration, by adding ethanol to an oyster extract. CONSTITUTION:Raw oyster is boiled in fresh water or seawater, and the soup is concentrated and optionally desalted to obtain an oyster extract having salt content of <=5%. The extract is added with ethanol to an extent to give a final product having an ethanol concentration of 1-4%. |
