PURPOSE:To prevent the corrosion of an Al vessel contg. set food by a seasoning in the contents by adding an ascorbate or an erysorbate to the vessel. CONSTITUTION:When noodles, rice, shellfish and a seasoning are set in an Al vessel without packing them to prepare set food, an ascorbate such as sodium L-ascorbate or an erysorbate is added to the vessel so that the seasoning contacts with the vessel in the presence of the salt. Powder or granules of the salt are put on the bottom of the vessel before the ingredients are set, or the powder or granules are mixed beforehand with the seasoning. In case of frozen food, the salt may be dissolved beforehand in a liq. seasoning. The pitting corrosion of the Al vessel by the seasoning is prevented. |
