[Also in Division A5] Vitamin C is stabilized against the formation of colour by incorporating a mercaptopropionylglycine of formula where R is hydrogen, acetyl or benzoyl and X is -OH or NH 2 . There may be from 0À001% to 10% by weight of the mercaptopropionyl glycine relatively to the total composition and from 0À1% to 200% by weight relatively to the Vitamin C contained therein. In examples, Vitamin C compositions are stabilized by adding α-mercaptopropionyl glycine, #-mercaptopropionyl glycine, α-mercaptopropionyl-glycineamide, #-mercaptopropionylglycineamide, α- acetylthiopropionylglycine and α-benzoylthiopropionylglycine. |
