Manufacture of food products. The method is characterised in that: - a casing with a closed base and a perforated or holed wall is partially filled; - a tubular stick which is perforated or holed closed and with the end is inserted into the partially filled casing and extends from a small dish for closing the casing; - the mould is placed in contact with a fluid acting on the food composition, via the perforations or holes; - the mould is opened and the composition, which has the form of a container with a blind axial shaft, is removed from the mould.
