PURPOSE:To produce TOFU having uniform quality, by producing continuous TOFU by a series of processes, denaturing protein of soybean at high temperature uniformly, and automatizing cutting, packing, etc. CONSTITUTION:A closed type cooker having inner pressure >= atmospheric pressure is used in the boiling process 105, a solution of ground soybeans is boiled at >=100 deg.C, fixed amounts of soybean milk and bittern are automatically fed to plural baskets automatically circulated in the coagulating process 107, and it is coagulated. In the pressing and molding process 108, a box mold consisting of a cover, side flames, and a bottom plate is used, a milky solution is fed to the box mold having the top of the bottom plate and the bottom of the cover covered with cloth, and pressurized. Further, in the primary cooling process 110, molded TOFU is cooled while being automatically transported with pallets and in the following cutting and packing process 111, the molded TOFU together with pallets are sent to a cutting and packing device, the molded TOFU is cut into plural TOFU with a constant size using a lattice knife by one process, and the cut TOFU is continuously packed individually. |
