The prods. are stable water-in-oil emulsions contg. 35-40 wt% fat, 2-3 wt% protein, 3-5 wt% carbohydrate and 1.5-3.0 wt% xanthan with a total energy content of at least 1500 kJ per 100 g. - The dressings are prepd. by adding the water soluble components and the water into a mixing container with turbulent mixing, then adding the previously homogenised water insol. components, including the xanthan dispersed in the tenfold amt. of oil.
