PURPOSE:To obtain easily usable flakes of dried fish such as flakes of dried bonito having improved metering properties and taste free from oxidation and scattering of fragrance in high yield, by cutting raw material dried bonito by a cutting blade rotating along a curved surface from one end so that the flakes of dried bonito are curled firmly in the cutting direction. CONSTITUTION:Raw material dried fishes such as dried bonitoes are used directly or cut into a constant thickness. They are shaved by a cutting blade rotating along a curved surface from one end, so that the shaved flakes are firmly curled in the cutting direction, to give the aimed flakes of dried bonito.
