PREPARATION OF STABLE YEAST HAVING EXCELLENT AGGLUTINATIVE PROPERTY

PURPOSE:To prepare the titled yeast free from the lowering of agglutinative property even by repeating the subculture, by sporulating a protoplast fusion yeast belonging to Saccharomyces genus. CONSTITUTION:A protoplast fusion yeast belonging to Saccharomyces genus [Saccharomyces FRM17VM2-2 (FERM-P No.7889)] is subjected to sporulation treatment, and the obtained spore is cultured. A yeast having high stability and excellent agglutinative property [Saccharomyces FRM17VM2-2) S1 (FERM-P No.7794), etc.] can be prepared. There is absolutely no lowering of the agglutinative property of the yeast even by the repeated subculture.
