PURPOSE:To obtain the titled food having improved flavor like natural cheese, and improved taste, by dissolving a citrate and phosphate in water under heating, adding edible fats and oils, and an organic acid to the solution in this order, and kneading them. CONSTITUTION:A citrate and/or a phosphate and optionally salt are dissolved in water under heating. The solution is blended with protein such as rennet casein, etc., and, if necessary, starch and gum with stirring. The blend is further mixed with edible fats and oils and optionally water with stirring, and incorporated with an organic acid and optionally cheese flavor and an anitoxidant, and kneaded to give the aimed food. |
