PURPOSE:To obtain a ham product having high shelf stability, by rolling cotton cloth round edible meat preserved with salt, smoking it, boiling it with water, drying after it is cooled, adjusting it to a proper water content, and subjecting it to vacuum packaging directly together with the cotton cloth. CONSTITUTION:For example, edible meat is immersed in 7-8wt% nitrite solution for 20 days, and cotton cloth is rolled round the meat (preferably twice). It is smoked for 2-3hr, and boiled in warm water at 75-80 deg.C for about 2hr. It is cooled, adjusted to a proper water content by drying, and the meat is subjected to vacuum packaging with a synthetic resin film from the outer periphery of the cotton cloth.
