PURPOSE:To obtain the titled food or ingredient having improved taste suppressing deterioration in quality, by bringing previously edible meat into contact with each solution or a mixed solution of an amino acid, sugar (sugaralcohol), organic acid salt, nitrogen compound, and reducing water content of the meat. CONSTITUTION:Edible meat such as fish meat, animal meat, etc. is previously brought into contact with solid or liquid one material of mixture of (A) an amino acid such as glutamic acid (salt), aspartic acid (salt), serine, proline, and threonine, or a mixture of the amino acid and another amino acid, (B) saccharide such as sucrose, glucose, xylose, etc., (C) sugaralcohol such as sorbitol, lactitol, glucitol, etc., (D) an organic acid salt such as citrate, malate, maleate, etc., and (E) a nitrogen-containing compound such as sarcosine or trimethylamine oxide, and further subjected to water content reducing treatment, to give the aimed food or ingredient.
