PURPOSE:To obtain a food ingredient having a fibrous structure inexpensively, by kneading a raw material consisting essentially of plant protein with water by an extruder under pressure and heating, subjecting it to extrusion molding from its tip die in the circumferential direction, and cutting it in the direction parallel to the direction of extrusion. CONSTITUTION:Protein such as soybean, wheat, etc. is blended with about 10-40wt% water, treated by an extruder, and a kneaded material of the raw material and water is extruded through a die at the tip of the extruder in the circumferential direction. The extruded molded material is cut in the direction parallel to the extrusion direction, so that a food ingredient capable of being easily splited in one direction, having a fibrous structure and a particular taste is obtained.
