PURPOSE:To prepare a granular food rich in oil and fat, having high dispersibility in water and free from blocking during storage, by impregnating an oil or fat in a specific granule composed of cereal and a binder. CONSTITUTION:(a) 100pts.wt. of cereal flour, starch and/or defatted milk powder is mixed with (b) <=100pts.wt. of a binder (e.g. sucrose, gelatin, calcium chloride, etc.), and the mixture is crushed. The obtained fine powder (particle size: about 15-100mu) is granulated e.g. by a fluidized layer granulation method, and the size of the granule is adjusted to obtain granules having a porosity of 0.9-1.4cc/g and a diameter of about <=600mu. (A) 100pts.wt. of the above granule is mixed with (B) 15pts.wt. of an edible oil or fat having a melting point of about <=45 deg.C (e.g. beef tallow, coconut oil, shortening, etc.) in liquid state, and stirred to obtain the objective granular food impregnated with an oil or fat. |
