摘要 PURPOSE:To prepare a processed vegetable food having high preservability and excellent palatability, by dissolving egg shell, clam shell, or bone in an acid, putting the solution together with vegetables in a container and heating the content. CONSTITUTION:Egg shell, clam shell or bone of cattle or chicken, etc., are crushed, added to an edible organic acid selected from acetic acid, citric acid, lactic acid, malic acid and succinic acid, and dissolved in the acid at normal temperature or under heating. The solution is filtered to remove the insoluble components, and the filtrate is optionally added with spices, sugar, water, etc. to obtain an acidic seasoning liquid containing calcium component. The calcium- containing acidic seasoning liquid is put together with vegetables such as melon, cabbage, radish, etc., in a container, and thermally sterilized to obtain the objective processed vegetable food. Since the calcium ions are included in the tissue of the vegetable, there is no degradation of palatability of the processed vegetable food obtained, even by heat-treatment.
