PURPOSE:To slurry of oil-in-water type emulsion containing air-sol of a specific particle size and oil particles and including thermally coagulating proteins and saccharides is molded and heated dielectrically with microwaves to give stabilized food of irreversible gel. CONSTITUTION:A slurry is prepared in the form of an oil-in-water type emulsion that contains bubble sol and oil drops of 20-500mu average particle size and includes at least thermally coagulating proteins and saccharides and is substantially composed of bonding water and semi-bonding water and it is molded. The molded product is heated dielectrically with microwaves at a temperature over 120 deg.C to form irreversible gel whereby a molded food of high oil content is obtained. In the dielectric heating, the body temperature of the molded slurry is first heated up to 50-70 deg.C for a while, then immediately raised up to over 120 deg.C by dielectric heating. Two different slurries may be connected, molded, then dielectrically heated as well. |
