PURPOSE:In a processed food of spawn consisting of spawn and mayonnaise, a processed food of spawn which has good appearance and palatability, and improved shelf stability, and is simply handled, by using the mayonnaise wherein a solid fat is totally or partially used as fats and oils. CONSTITUTION:In a processed food of spawn consisting of spawn (e.g., herring roe, cod roe, etc.) and mayonnaise, mayonnaise comprising the whole or part of fats and oils using a solid fat (preferably one having >=2 SFI at 15 deg.C, 15-45 deg.C melting point, and melting sharply) is utilized. For example, the mayonnaise and the spawn molded into a sheet shape are laminated, to give the aimed processed food of spawn. |
