PURPOSE:In production of a dried food such as powdery drink, etc., containing a dipeptide sweetener and an edible organic acid, to prevent deduction in degree of sweetness and to raise shelf stability, by coating at least one of the sweetener and the organic acid with fats and oils, etc. CONSTITUTION:In producing a dried food such as a dipeptide sweetener (preferably alpha-L-aspartyl-L-phenylalaninemethyl ester) and an edible organic acid (e.g., citric acid), at least one of the sweetener and the organic acid is coated with a preferable amount of 1-5wt% fats and oils, polysaccharide, protein, etc. |
