The present invention relates to a method for the manufacture of special breads with novel taste and presentation which keep well, known as "Paysanne" or "Campagnarde" bread. This bread is composed, in terms of flours, of 10% rye flour, 5% bran, 85% white flour, in addition to the usual ingredients, salt, water, leavening and, per 100 kg of this composite flour, 2% fats and 500 g of liquid caramel.
