PURPOSE:To obtain ice cream having well harmonized flavor, eatable with the fingers, by concentrating water content of hot peeled sweet potato into a specific ratio to give a processed ingredient of sweet potato and covering ice cream with the processed ingredient. CONSTITUTION:Hot peeled sweet potato is concentrated to 30-55wt% water content to give the processed ingredient 12 of sweet potato and the ice cream 10 is covered with the processed ingredient. The hot peeled potato is blended with 0-9.5wt% edible fats and oils, 0-2.5wt% natural paste, 0-9wt% starch, 0-4wt% vitellus powder, adjusted to 50-75wt% total solid content to give a paste, which is optionally mixed with a small amount of foreign wine, spice, or a coloring matter, and adjusted to 45-75 dextrose equivalent, to give the processed ingredient 12 of sweet potato, the ice cream 10 is covered with the processed ingredient. This ice cream has a well harmonized taste, and can be eaten with the fingers. |
