In the thermal treatment processes for red wine grape mash, the problem exists of bringing the red wine grape mash, produced in a short time and in large amounts, to an elevated initial temperature in order to achieve a more intensive red colour. According to the invention this aim is achieved according to the process by continuous pumping of the pumpable mixture from a vessel through a heat exchanger into a receiving vessel with the aid of any desired pump, continuously pumping heated water through the heat exchanger with the aid of a known heated high pressure cleaner and by returning the cooled water from the heat exchanger into the float chamber, located on the water inlet side, of the high pressure cleaner.
