In an evaporator wherein the liquid-to-beevaporated, e.g. salt water, flows successively through a series of flash evaporation stages separated by partitions 14, the liquid passes from one stage to the next through a slit 16, at the base of the separating-partition 14, and rises through a converging passage, formed by an inclined plate 20, to a throat 22 which is controlled by an adjustable valve 28. The liquid is then guided by deflecting plate 24 so that it is projected across the stage in the form of a sheet from which flash vaporization takes place. The valves enable the pressure-conditions in the stages to be controlled without allowing vapour-leak to occur between adjacent stages. The vapour, liberated in the stages, passes to heat-exchangers (not shown) where it is condensed. Each valve comprises a cylindrical tube 36 in which are cut a pair of oppositely-disposed slots 38, 40. The valve is adjusted by rotation (manually or automatically) so that the effective width of one of the slots 38, 40 is restricted because of its proximity to partition 14. The first stage may be provided with a cylindrical valve which has only one slot.
