PURPOSE:To obtain a processed alga having the form takable in a large amount as a side dish, by keeping the pH of an alga in acidic state with an acidulant and vinegar, adding a blowing agent to the alga, dissolving the mixture with heat under agitation, and coagulating the liquid with a coagulant. CONSTITUTION:Fresh, semi-dried, dried, or powdery alga such as tangle, WAKAME seaweed (Undaria pinnatifida), MOZUKU (Nemacystus decipiens, a fillamentous alga), etc. is maintained in acidic state with an acidulant such as citric acid, dl-malic acid, etc. and a food vinegar. The acidified alga is added with a blowing agent such as sodium bicarbonate, stirred, and left at rest for 20min-3hr at normal temperature or at a low temperature. The aged mixture is put into a pot, charged with water or not water, and boiled to effect the dissolution of the alga and at the same time, the generation of gas by the thermal decomposition of the blowing agent. The dissolved liquid is coagulated to a proper shape with a coagulant such as CaCl2. A subsidiary dish (a health food) effective to the supply of nutrient and maintenance of health can be prepared easily by this process. |
