A method of preparing a food product from scraps of meat or fish or inferior cuts of meat or fish in which method the meat or fish is cut into thin flakes and gently blended at slow speed with water and a binder which includes soy protein isolate, sodium chloride, and sodium polyphosphates; the mixture is then formed to any desired shape.
