PURPOSE:To prepared a rod-shaped cut food free from brittleness, by extruding a kneaded food with a food kneader extruder through a flat orifice, and cutting the extruded sheet with a roller cutter along longitudinal direction. CONSTITUTION:A kneaded food raw material [e.g. raw material of cake, KAMABOKO (boiled fish paste)] is extruded with a food kneader extruder through a flat orifice 2 attached to the extrusion head 1. The fibers in the flat extrudate are aligned along the extrusion direction by this process. The extruded flat food raw material is cut longitudinally with a roller cutter 6 in the form of rods. The cutting of the kneaded food can be carried out without causing the tearing off or breakage of the product. |
