The invention relates to the microbiology industry. The process which is the subject of the invention consists of placing the solid substrate in a bioreactor 1, in wetting it, in sterilising it with saturated steam, in cooling it up to 27-36 DEG C, in introducing an inoculum thereto and in subjecting it to aeration, and is characterised in that the sterilisation of the solid substrate is carried out by circulating saturated steam through the mass of solid substrate, with the production of an extract, in that the wetting of the solid substrate is carried out until it is completely saturated by the extract, and in that the aeration is performed by pulsed admission of compressed air into the bioreactor until an excess pressure (relative to atmospheric pressure) of 0.01 to 0.06 MPa is obtained therein, simultaneously with the introduction of the inoculum and with subsequent evacuation of the compressed air into the environment, bringing about the pulsed flow of the gas-liquid mixture obtained through the whole mass of the solid substrate. The invention can be used in particular in the microbiology industry for the production of forage proteins, amino acids and enzymes.
