摘要 A process for producing a sourdough, in which the starter material, water and cereal milling product are placed in a fermentation vessel at a temperature which favours the development of lactic acid bacteria and the temperature is lowered in dependence on a measured parameter to a value which favours the development of acetic acid bacteria, the temperature lowering being carried out in dependence on the pH measured in the material.
