发明名称 METHOD OF MAKING 'BETTARAZUKE' (A KIND OF RADISH PICKLE)
摘要 <p>PURPOSE:Radish is pickled in high-concentration salt solution, then seasoned with sucrose, glucose and fructose and desalted to give BETTARAZUKE of good quality, wrinklefree on the surface, crisp and tasty. CONSTITUTION:Peeled radishes are pickled in a vessel with a saline solution of 14-18% concentration for 1-2 days. Then, the pickled radishes are washed and further pickled by adding 1-2wt% of salt. The radishes are dipped in a solution of sucrose only, or a combination thereof with glucose and fructose or in two solutions of glucose and fructose mixture and sucrose, respectively for 2 days 2 times to effect seasoning and desalting. Then, a prescribed seasoning solution is used to effect finish seasoning to give the objective pickles.</p>
