PURPOSE:To obtain a monascus pigment having strong yellowness, by adding a basic amino acid to an organic solvent, and extracting the monascus pigment from microbial strain belonging to Monascus genus with the organic solvent. CONSTITUTION:Dried bacterial cells obtained by the fixed or liquid culture of microorganism belonging to Monascus genus is extracted with an organic solvent. In the above process, the organic solvent is added with a basic amino acid such as arginine, lysine, histidine, etc., optionally in combination with a nitrogen-containing compound such as hydrolyzed casein. |
