An antioxidant system comprises a multilayer system of the lamellar, liq. crystal type froma polar lipid contg. a lipophilic and/or amphiphilic antioxidant. Pref. the polar lipid is water-sol or -dispersible, esp. a phospholipid, pref. phosphatidylcholine, phosphatidylethanolamine (or the acetylated deriv), phosphatidylinositol, and lipo-derivs of these. A mixt. of a polar lipid and an unsatd. monoglyceride may be used. The lipophilic antioxidant is tocopherol (pref) butylated-hydroxyanisole or -hydroxytoluene, tetrabutylhydroxyquinone or a gallate. The ratio of antioxidant: polar lipid is 0.0001-4:1(0.01-1:1).
