<p>In an edible fat compsn. contg. a partial glycerol fatty acid ester (I) with crystallisation behaviour similar to that of the fat which contains its, (a) (I) consists of a diglyceride or a mixt. of a di- and a mono-gyceride in which the ratio of di-:mono-glyceride is at least 5, (b) the amt. of di-glyceride is 5-30 wt.%, w.r.t the amt. of fat in the compsn which crystallises at 5-35 deg.C and (c) the diglyceride contains (1) not more than 50 wt.% of 16C and/or 18C satd. fatty acid residues, (2) not more than 50% of 12C and/or 14C satd. fatty acid residues, (3) 0-70% of 18C monotrans-fatty acid residue, and (4) 0-70% of 18C monocis- and 18C dicis-unsatd. fatty acid residues, where (a) + (b) + (c) + (d)=100%.</p> |
