PURPOSE:To prepare an alcoholic drink having not too high diacetyl concentration, in a short time, by carrying out the first fermentation of a brewing raw liquid under a specific condition without causing the proliferation of yeast, and then carrying out the second fermentation accompanied by the proliferation of yeast. CONSTITUTION:The brewing raw liquid is subjected to the first fermentation in the presence of immobilized yeast having a concentration of >=0.4% based on the raw liquid, at <=4 deg.C and/or under anaerobic fermentation condition, without causing the proliferation of the yeast. The fermented liquid is subjected to the second fermentation accompanying the proliferation of the yeast in the presence of yeast having a concentration of <0.4% based on the raw liquid, to obtain the objective alcoholic drink. |
