The invention relates to a device for opening shellfish, intended in particular to separate the lid from the body of an oyster shell or of a scallop or of any other shellfish. According to the present invention, the device for opening shellfish 1 consists of a fixed frame 2 comprising an oyster knife blade 5 and means 3 for positioning the shellfish. Moreover, it has manipulation means 4 which can be adapted to the dimensions of the shellfish, to bring the shellfish closer to the knife 5 and to remove the lid of the body of the shell by horizontal displacement of the shellfish towards the knife 5.
