The invention relates to a process and a plant for the manufacture of droplets. This plant comprises a centrifuging device 3 provided at its periphery with orifices 14 for generating droplets of a material 5 capable of flowing, characterised in that each orifice 14 for generating droplets comprises an essentially cylindrical central part 14a, with a substantially horizontal axis, and has an externally facing internal end part 14b of frustoconical shape whose base of larger diameter 24 faces outwards. This orifice 14 is preferably defined by a nozzle 30 fitted onto an opening 32 in the peripheral wall of the centrifuging device 3. The constituent material of the nozzle 30 is advantageously not wettable by the material which is capable of flowing. The invention makes it possible to obtain uniform essentially spherical droplets of a diameter greater than at least two millimetres which can contain yeasts or fermentation microorganisms employed for obtaining beer, wine or champagne by fermentation. <IMAGE>
