A process for preparing a maltoheptaose derivative of the general formula I <IMAGE> where R is a glucoside, phenylglucoside, mononitrophenylglucoside, sorbitol or gluconic acid group, characterized in that the phenylglucoside or nitrated phenyglucoside in question is reacted with α-cyclodextrin, amylase or soluble starch in the presence of bacillus macerans amylase.
