Method for growing saprophytically living fungi, in particular Pleurotus sp., in which a substance which consists essentially of vegetable waste products, in particular comminuted or chopped cereal straw, is inoculated with mushroom spawn, compressed into manageable bodies and subjected to certain climatic growth conditions, and the fruiting bodies of the fungi which grow from the substrate bodies are harvested, the method being characterised by the following individual steps and conditions: a) pretreatment of the comminuted substrate in a room which is essentially under anaerobic conditions, b) inoculation of the substrate with spawn and filling cultivation boxes with the substrate and compacting it, the cultivation boxes being provided with a mesh on at least one side and covered behind the mesh by a film, c) carrying out a growth initiation phase in an essentially sealed room at a temperature of 20-25 DEG C at a relative atmospheric humidity of 60-90%, preferably 85%, and an atmosphere containing 10-20% of CO2 and an atmosphere exchange number of 10-20 per hour over a residence period of 14-30, preferably approximately 21, days, d) making holes in the film so as to provide fructification zones for the fruiting bodies and e) effecting a fructification and harvest phase at 8-28 DEG C and an atmosphere with a humidity of 85-98% at an atmosphere exchange number of 10-30 and an illumination density of approx. 1000 ...
