The allyl glucosinolate content of Brassica juncea L. mustard seed, meal or products thereof is reduced to less than 30 micromoles/gram of oil extracted air dry sample by treatment with ammonia or ammonium hydroxide at 0-120 DEG C. The seeds may be treated and then subjected to commercial cooking conditions or commercial desolventizing-toasting conditions. The levels of sinapine and indolyl glucosinolate are also reduced and the content of bound nitrogen is increased. The process enables the use of the product in animal feed stock without problems of palatability or toxicity. |
