Starch dispersible in boiling water to the extent of 95-100% is prepd. by (a) forming a mixt. of starch, 1-5 wt.%, w.r.t. dry starch, of a monoester of a fatty acid as emulsifier, and 20-30 wt.%, w.r.t. the mixt., of water, and (b) heating the mixt. at 90-120 deg.C for 1-20 mins. - Pref. the mixt. contains 20-25% water and is heated in a closed chamber for 5-20 mins., or the mixt. contains 25-30% water and is treated by microwaves for 1-5 mins. After the microwave treatment, the starch is coarsely ground, dried and finely ground. The heat treatment may be by extrusion. |
