Process characterised in that the honeycombs 1, containing the honey, whose cells are closed by opercules, are removed from the bee-hive, these honeycombs 1 are then placed into perforated baskets 2 fitted with a lid 6 itself perforated in which they are subjected to the opercule-removing operation consisting in removing with a knife the wax opercules to open the cells, the perforated baskets 2 are then closed and they are placed in a rotary honey extractor 9 in which the honey is discharged from the baskets 2 under the effect of the centrifugal force. c.
