摘要 The present invention is concerned with a method for the improvement of the technical efficiency and of the quality of tinned mushrooms. This method is characterized by the fact that, in order to avoid blanching, the de-aeration of the mushrooms is achieved by treatment under a partial vacuum combined with an impregnation by means of a saline solution that makes a loss of water by osmosis possible.
