PURPOSE:To produce fermented soybeans having good nutriment, taste and preservation quality, by permeating water containing specific ions into soybeans washed with water, boiling the soybeans in the above-mentioned water containing the ions, cooling the soybeans, and transferring Bacillus subtilis thereto. CONSTITUTION:Soybeans washed with water are dipped in water at >=8pH containing ions, and produced on the cathode compartment side by electrolytic dissociation and electrical permeating action, and permeated therewith. The resultant soybeans are then boiled in the above-mentioned water containing the ions or the boiled water containing the ions is sprayed on the soybeans, and the soybeans are quenched. Bacillus subtilis is then transferred to the soybeans and multiplied, and the soybeans are preserved at a low temperature. |
