Process for the production of N-phosphonomethylglycines, corresponding to the general formula: <IMAGE> represent hydrogen atoms, or else functional groups which can be substituted at the hydrogen atoms of N-phosphonomethylglycine: <IMAGE> when it is reacted, for example, with alcohols, characterised in that glycine is reacted beforehand, in the presence of an alkali, with a beta -dicarbonyl compound in order to obtain the alkali metal salt of the corresponding N-substituted glycine, these N-substituted alkali metal glycinates are then reacted with a chloromethylphosphonic acid at the boiling temperature of the mixture, whose pH must be between 10 and 12, the mixture is then cooled and the pH is adjusted to between 1 and 2 with concentrated hydrochloric acid.
