PURPOSE:To obtain the titled drink having clear purple blue color and improved coloring stability without adding a coloring matter to it, by subjecting a fermentation raw material comprising husk of wheat or barley to alcohol fermentation and plant textrue enzyme degrading action on plant textrue without heating the raw materials, heat-treating the colored fermented solution. CONSTITUTION:(A) Husk of wheat or barley (e.g., barley, etc.) and (B) a glucide (e.g., glucose, etc.) are used for a fermentation raw material, fermented in the presence of (C) an enzyme agent (e.g., cellulase, etc.) of degrading plant texture and a yeast without heating. After the fermentation is over, when the resultant substance is colored, it is heated (65-70 deg.C for several minutes), to give the aimed drink. After the fermentation is over, the yeast, etc. is removed from the substance to give a filtrate, which is allowed to stand at 0-20 deg.C for 2-3 days to cause the coloring. Preferably air is introduced to the filtrate in order to promote the coloring. |
