PURPOSE:To obtain the titled drink which exhibits liquid, jelly or sherbet-like appearance according to the storage temperature, by heating an aqueous solution of sugar and acid-resistant gelatin, dissolving coffee extract, defatted milk powder, etc. into the solution, adjusting the pH of the mixture with acetic acid, adding water thereto, and thermally sterilizing the mixture. CONSTITUTION:Dried cofffee extract and defatted milk powder or fermented milk powder are added and completely dissolved in a hot aqueous solution of sugar and acid-resistant gelatin, and the pH of the mixture is adjusted to 5.0- 5.5 with a small amount of acetic acid. The mixture is diluted with water and thermally sterilized to obtain the objective coffee drink which takes three phases corresponding to the change in the storage temperature, i.e. liquid phase, jelly phase and sherbet-like phase. |
