A process of preparing bean curd and bean milk from raw soybeans consists of a preliminary processing stage which includes drying raw soybeans at a low temperature., crushing them into rough pieces, removing the outer coats from those pieces, soaking the result in water, and milling it into fine particles, and a final processing stage which includes boiling the resulting product under hot steam in a closed steamer vessel, removing air bubbles from the result by blowing a jet of pressurized steam onto the surface, and adding an appropriate solidifier to the resulting bean milk. Then after, a final bean curd is obtained in the usual manner. |
