PURPOSE:To facilitate the cleaning of a part in the kitchen, the fat and oil constituents of which should be removed, by a method wherein a fat and oil constituent extracting section is provided detachably below an exhaust gas introducing chamber. CONSTITUTION:A hood 2 is provided with a configuration, opened widely at the lower part thereof, and the width thereof is designed so as to be substantially the same to or slightly larger than the width of a kitchen equipment such as a gas range or the like while the depth thereof is designed so as to be larger than the kitchen equipment 5 such as the gas range or the like, in order to be capable of collecting sufficiently the exhaust gas generated from the kitchen equipment 5 such as the gas range or the like. The ventilator 4 is formed at the inside of the hood 2 along the side plate 7 of the side wall side along the whole width of the hood 2 and is constituted of the fat and oil constituent extracting section 9, extracting the fat and oil contents in the exhaust gas, and an exhaust gas introducing chamber 10, introducing the exhaust gas, whose fat and oil contents are removed, into an exhaust duct 3. The fat and oil constituents extracting section 9 is consisting of a box-type fat and oil constituent extracting unit 14 and is mounted detachably below the lower opening 13 of the exhaust gas introducing chamber 10. |
