PURPOSE:An adequate amount of unpolished rice grains are added to beans enable the beans to be prepared at low temperatures without damage of enzymes and vitamins in them. CONSTITUTION:Dried beans such as soybean or adzuki beans are combined with 15wt%, based on the beans, of unpolished rice grains, then an appropriate amount of water or warm water is added thereto to effect sufficient water absorption. Then, they are rapidly heated up to about 75-90 deg.C, then cooled by letting stand. Finally, the beans are separated from a slurry of unpolished rice and subjected to freeze-drying under vacuum, when desired. |
